Sunday Love ♥: Food for Thought - Banana Bread Muffins






Recipe makes 24-30 muffins. Cooking time ~45 minutes. 

So I did a little baking over the weekend and decided to share another recipe with you guys since my last foodie post seemed pretty popular based off of my blog stats. This time I made banana bread muffins with walnuts, and I think they're delicious.  A perfect breakfast muffin with your coffee or tea, and a much healthier alternative to anything store bought. It's also super easy to make (no really, it's probably the easiest recipe ever)!! So if you're interested, just keep on reading for the ingredients and directions below:

Ingredients:
3 cups of brown sugar
4 eggs
1 cup of oil
1 tablespoon of vanilla extract
1 cup (8oz) of sour cream
3 cups of all purpose flour
2 teaspoons of baking soda
2 cups of crushed walnuts (optional)
2 cups of sliced bananas

Directions:
Step 1: Take all the above ingredients in their specific measurements and place into one large mixing bowl
Step 2: Preheat oven to 350℉
Step 3: Using a masher (I use one meant for making mashed potatoes), mash all ingredients together. The purpose of this is primarily to make sure the slices of bananas get completely mashed up. If there are some larger chunks, that is okay!
Step 4: Keep mixing your batter until all the ingredients are well blended together 
Step 5: Using a spoon, ladle your batter into muffin pans. I like to use cupcake cups because it's easier to clean and also less messy when you're eating, but if you don't have any then make sure to grease your pan first! Make sure to leave a little room and don't fill your cups all the way to the top!
Step 6: Set your timer for 45 minutes and pop your muffin pans into the oven!!
